Sizzling Sirloin Steak Fajitas

Thin-sliced sirloin seared hot and fast with bell peppers and onions, finished with lime — a 25-minute pantry win that uses six ingredients you probably already have.

Ingredients

  • 500g sirloin steak, thinly sliced
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 lime, juiced
  • 8 small flour tortillas
  • Salt and pepper to taste

Method

  1. Toss the sliced steak with cumin, smoked paprika, salt and pepper.
  2. Heat 1 tbsp oil in a large skillet over high heat until just smoking.
  3. Sear the steak in a single layer for 2 minutes per side, then set aside.
  4. Add the remaining oil, peppers, onion and garlic to the same skillet and cook 5-6 minutes until charred at the edges.
  5. Return the steak to the pan, squeeze over the lime juice and toss to combine.
  6. Warm the tortillas and serve the steak and pepper mixture family-style.
