Chicken Cobb Salad

A protein-packed cobb built from leftover roast chicken, hard-boiled eggs and whatever crisp vegetables are about to turn — on the table in 15 minutes.

Ingredients

  • 2 cups cooked chicken breast, diced
  • 4 cups romaine lettuce, chopped
  • 2 hard-boiled eggs, quartered
  • 4 strips bacon, cooked and crumbled
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup blue cheese, crumbled
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Method

  1. Arrange the chopped romaine in a wide bowl or platter.
  2. Line up the chicken, egg, bacon, avocado, tomatoes and blue cheese in rows across the lettuce.
  3. Whisk the olive oil and red wine vinegar with salt and pepper.
  4. Drizzle the dressing over the top just before serving.
