Air-Fryer Salmon Bowls

High-protein rice bowls with air-fried salmon, quick-pickled cucumber and a citrus soy drizzle — built for the pantry-match crowd who wants dinner in under 20 minutes.

Ingredients

  • 2 salmon fillets, cubed
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cups cooked rice
  • 1 cucumber, thinly sliced
  • 1 tbsp rice vinegar
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 1 spring onion, sliced

Method

  1. Toss the salmon cubes with soy sauce and sesame oil.
  2. Air-fry at 200°C (400°F) for 8-9 minutes, shaking the basket halfway.
  3. Meanwhile, toss the cucumber with rice vinegar and a pinch of salt.
  4. Divide the rice between two bowls and top with salmon, pickled cucumber and avocado.
  5. Finish with sesame seeds and spring onion.
